Pumpkin Whoopie Pie with Maple Cream Cheese Filling

Also known as a heaping of pumpkin sugar deliciousness in a bite! In the words of Tyler Florence “It’s fantastic..mmm”

This was my first time working with pumpkin and it was pretty easy, at least when you buy it out of a can. Although I will say you really don’t feel as accomplished saying you scooped three cups of pumpkin from a krogers can and added it to the mix… so when I tell the story in the future it will be “Oh yeah I slaved over getting that pumpkin puree just right, had to find the best looking one and work it to death”. Blood, sweat, and tears… and baking, and smiles.

The recipe actually starts out pretty similar to any cookie mixing the margarine with some sugar, oh and more sugar, but my favorite part of making any cookies is adding the flour to the sugar / butter mixture. It just looks so nice and it gives you a great sense of what’s to come. From here you can start to get a sense of the consistency of the cookie itself. Will it be soft and fluffy like clouds for your mouth or crisp and need a little dip in coffee?

Once finished mixing everything together I still had 2 cans of puree sitting and was baffled….. how can the cookies be pumpkin with no pumpkin??!! Then I realized I completely skipped a step… yes people I was wrong… can you believe it? Everyone is allowed 1 mistake in their life right? Just happy I’ve only made my first 1 at 24, that’s a pretty good streak huh?

Pumpkin and spice added it was time to start eating…. um I mean making cookies, who honestly eats just the dough by spoonfuls, ok I have a problem :)

Spoonfuls of that baby go right into the oven to cook for just a bit. Next it was time to make some more sugary deliciousness. A lil whipped butter and cream cheese, you know working out those muscles cus I don’t have a mixer. It’s really not easy. Throw in some maple syrup and vanilla and you got your filling.

And now for my favorite part take two of those bad boy cookies and throw some of the filling you made in between. After cooling in the fridge for 30 minutes, which is the hardest part, you’ve got yourself a nice little calorie-fantastic morsel of delicious pumpkin-spice-sinful-should be illegal cookie. A bites all you need but a few will set you right.

    That is truly delicious. Every time I saw cookies with some caramel or something to whip I can’t resist eating it even if I am on a diet. Can you post the amount of the ingredients? I am not a baker to think the exact amount of all of the ingredients. Thanks a lot.
