Spicy Fried Tomatillo Sandwich
Last weekend I noticed tomatillos in almost all the vendor stands in the market. I love these little guys they look like small lil’ tomatoes wrapped in a husk. Although if you bit in one you would know right away that they are a veggie all their own. Apparently part of the same family as tomatoes, they have a nice little tart bite to them. Now honestly I’ve really ever only made salsa verde with them and they provide a great texture and consistency to a salsa, in fact I prefer it to regular salsa. Anyways figure I’d try something different with them ala the sandwich.
It was super simple, just had to break away the husks, clean them so they’re not sticky. Sliced em up like normal tomatoes then breaded them with breadcrumbs and red chili powder. Took some good old bread and baked it with some pepperjack cheese til it’s got that nice little bubbling going on. Fried up the tomatillos added some mayo and red onion… deliciousness ensues. It’s a little spicy and a little tart with a nice crunch, I had to stop myself from making another.
